Cooking the Spaghetti,Boil the water and add olive oil 1 teaspoon and pinch of salt. Drop the spaghetti into the boiling water and cook till it’s ready (about 8-10 minutes). While spaghetti is cooking,Cut the chicken into small slices and diced all the Vegetables and Herbs ( Garlic, cherry tomatoes, celery, carrots, onion, fresh basil and rosemary ) Heat a pan at medium temperature and add olive oil, when oil start to heat up add garlic, basil and onion and stir it for about a minute.
Now add the chicken and mince meat and stir till the meat color is transparent. At this point add salt and pepper for seasoning. Mix all together and close the lid and cook for another 5 minutes.
After 5 minutes of cooking add carrots, celery and cherry tomatoes, mix well and close the lid and cook for another 5 minutes.
After 5 minutes add tomatoes puree, oregano, rosemary and plum tomatoes. If plum tomatoes are too big brake them while you are stirring.
About 1 minutes of stir, add chicken stock, mix well and close the lid and cook for another 5-7 minutes.
Finally add red wine and Parmesan cheese. Your Chicken and Beef Bolognese is ready
Serve on top of the cooked spaghetti and garnish with Parmesan cheese.
