Quinoa Salad with Parsley

Ingredients

  • ½ cup Quinoa (170 g)
  • 1 bunch Fresh Parsley
  • 4 - 5 Baby Cucumber
  • 10 - 12 Cherry Tomatoes
  • 1 Fresh Lemon
  • 1 Onion
  • 2 tbsp Olive Oil
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Cinnamon Powder
  • 1 tbsp Garlic Powder Roasted
  • pinch of Nutmeg
  • 1 tbsp All Spices
  • ¼ tsp White Pepper Powder
  • 500 ml Water
  • Salt to taste

Instructions

  • Add Quinoa and water to a saucepan and boil them together in medium heat for about 10 minutes.
  • Strain the water and run the cold water to stop further cooking.
  • Chop the fresh Parsley, cucumber, cherry tomato, bell pepper, Onion and green chili, and add them into a bowl.
  • squish half lemon juice and add olive oil and apple cider vinegar.
  • Add cinnamon powder, white pepper powder, nutmeg, garlic powder, all spice and salt.
  • Mix all together until everything combine well.
  • Finally add cooked Quinoa and mix well.
  • Enjoy your Quinoa Salad.
