Ingredients

  • 200 g Bitter Melon
  • 8-10 Cherry Tomatoes
  • 1 Medium Onion
  • 1 tsp Salt
  • 1 tsp Turmeric Powder
  • 1 tsp Sugar
  • 2-3 Green Chili
  • ½ Lemon
  • Olive Oil enough to fry

Instructions

  • Prepare the Bitter Melon: Wash the bitter melons thoroughly and slice them into thin, even circles.
  • Season the Bitter Melon: Place the slices in a bowl and sprinkle with salt and turmeric powder. Mix well to coat evenly.
  • Let It Rest: Allow the mixture to sit for a few minutes so the flavours can begin to develop.
  • Heat the Oil: In a pan, heat a little olive oil over medium heat.
  • Fry the Bitter Melon: Once the oil is hot, add the bitter melon slices and sauté for about 2 minutes until they begin to soften slightly.
  • Set Aside: Remove the fried bitter melon slices from the pan and let them cool.
  • Prepare the Vegetables: Slice the cherry tomatoes into halves or quarters and add them to a large mixing bowl.
  • Add the Chilies: Finely chop the green chilies and add them to the same bowl.
  • Add the Onion: Dice the onion into small pieces and toss them in with the other vegetables.
  • Combine Everything: Add the fried bitter melon slices to the bowl, then squeeze fresh lemon juice over the top.
  • Sweeten the Salad: Sprinkle sugar into the mixture to balance the flavors.
  • Mix Thoroughly: Using clean hands, gently mix all the ingredients together to ensure the flavours blend well and everything is evenly coated.
