Chocolate coconut brownies are my favorite. This is a very easy recipe. If you like coconut desserts, this chocolate brownies make your day.

These chocolate coconut brownies has three layers (as you can see on my featured picture). Start with fudgy (but not too fudgy) chocolate brownie on the bottom, then the coconut filling, this depend on you whether you like to have a thin or thick layer of coconut. Finally the chocolate ganache right on the top.

Which chocolate is best for brownies?

I will say defiantly it’s dark chocolate. To make the bottom fudge or cake, dark chocolate is commonly used in the brownies world. For the ganache I preferred milk chocolate. You can use any chocolate that you like.

How do you eat chocolate brownies?

This is not a dessert. It is a snack. Try to avoid chocolate brownies at lunch time or dinner time. Treat it as a rarefied, as an infrequent, outside meal-time snack. I like to eat with black tea without sugar. Chocolate coconut brownies has very rich flavors of sweets

Is Brownie good for health?

Chocolate can increase your Good cholesterol, also been found to help lower the blood pressure. Also dark chocolate have anti-inflammatory qualities. So as long as you’re enjoying it every now and then, a delicious chocolate brownie can be great for your health.

How to Make Chocolate Coconut Brownies.

Step by step guide with photos

1. Fill ¼ water on a small saucepan and put over a lower heat. Place a medium bowl on top of the saucepan without touching the water.

2. Put butter and dark chocolate into the bowl and stirring occasionally until butter and chocolate have melted. then turn off the heat.

3. Add sugar to the bowl while it’s on the saucepan and whisk well.

4. Remove the bowl from the pan and add eggs one by one while whisking

5. Add coffee, salt, vanilla, dark chocolate powder and flour, Mix all together

6. Pour the mix into a baking tray and bake for 30 minutes at 180 °C (350 °F)

For Coconut layer:

7. Add desiccated coconut into a large bowl and add condensed milk and mix both until thoroughly combine.

8. Dump the coconut mixture on top of the brownies (make sure the brownies cooled down before dumping the coconut mixture) and spread it around evenly. Refrigerate while you prepare the ganache.

The ganache:

9. Warm up the whipping cream in a small saucepan over medium-low heat . Take a medium size bowl and add milk chocolate (break into pieces) and hot whipping cream and stir until melted and smooth.

10. Pour the ganache (chocolate cream mixture) over the coconut topped brownies and set aside to cool down.

11. One cooled down put it in a fridge for at least 2-3 hours for the ganache to firm up. Cut them into small cubes and enjoy!

Note:
If you like, you can sprinkle some shredded coconut on top of the brownies.

  • 120 g Milk Chocolate
  • 200 g Sugar
  • 3 large Eggs
  • 1 tsp Vanilla
  • 1 tbsp Dark Chocolate Powder
  • 95 g Flour
  • 200 g Desiccated Coconut
  • 340 ml Condensed Milk
  • 100 ml Whipping Cream
  • 1 tsp Coffee
