Chicken and Beef Bolognese Recipe is one of my favorite dish all the time. Last year we where in Italy for 6 days, believe me or not, I ate bolognese for the lunch every single day. It was delicious and the local restaurant make their own flavors. Absolutely fantastic experience. Today I thought, I should let you know bit of that experience by sharing chicken and beef bolognese recipe.
Choosing the right spaghetti is very important , some spaghetti cook fast, some takes bit longer to cook, so it’s all depend what kind of spaghetti you are using, my advise is to check yourself rather than rely on the fixed time frame. Once spaghetti is ready, drain all the water immediately and run the cold water through the spaghetti to stop cooking further.
Chicken and beef bolognese has a little reputation for being an unhealthy meal, but you can make this a healthy meal, by cutting down red meat and choosing some vegetarian mince or chicken mince.
Can I keep this for next day?
Yes, of cause. You can keep this bolognese in the fridge up to 3 days. Actually this sauce will taste better on the next day. Make sure you use a plastic container to store them. You can simply re-heat this by placing in to a saucepan with a splash of water. Cook for about 10 minutes over the medium heat until it’s get piping hot.
Also you can re-heat this chicken and beef bolognese in a microwave, if you prefer.

Cooking the Spaghetti
- Boil the water and add olive oil 1 teaspoon and pinch of salt. Drop the spaghetti into the boiling water and cook till it’s ready (about 8-10 minutes).
2. Once spaghetti is cooked, drain all the water and run the cold water through the spaghetti to top cooking anymore.
3. While spaghetti is cooking, cut the chicken into small pieces and set aside.
Preparing the vegetables,
4. Diced all the Vegetables (Carrot, Celery and cherry tomatoes)
5. Chop all the herbs including Onion,garlic,rosemary and fresh basil)
6. Heat a pan at medium temperature and add olive oil, when oil start to heat up add garlic, basil and onion and stir it for about a minute.
7. Now add the chicken and mince meat and stir till the meat color is transparent. At this point add salt and pepper for seasoning. Mix all together and close the lid and cook for another 5 minutes.
8. After 5 minutes of cooking add carrots, celery and cherry tomatoes, mix well and close the lid and cook for another 5 minutes.
9. After 5 minutes of cooking add tomatoes puree, oregano, rosemary and plum tomatoes. If plum tomatoes are too big brake them while you are stirring. (if can’t break, take it out from the pan and cut them in to small spices and put them back).
10. About 1 minutes of stir, add chicken stock, mix well and close the lid and cook for another 5-7 minutes.
11. Finally add red wine and Parmesan cheese. Your Chicken and Beef Bolognese is ready.
12. Serve on top of the cooked spaghetti and garnish with Parmesan cheese.

Ingredients
- 250 g Spaghetti
- 200 g Mince Meat Beef
- 100 g Chicken Brest
- 1 can Plum Tomatoes
- 250 g Cherry Tomatoes 18-20 tomatoes
- 50 g Parmesan Cheese
- 2 medium Onion Diced
- 3 clove Garlic Chopped
- 2 large Carrots Diced
- 1 stick Celery Diced
- ½ cup Red Wine
- 1 tsp Tomato Puree
- Fresh Basil Handful
- 1 tsp Fresh Rosemary
- 300 ml Chicken Stock
- 1 tsp Oregano
- 2-3 tbsp Olive Oil
- Salt To taste
- Pepper To taste
Instructions

- This sauce tastes even better the next day. It can be made up to 2 days in advance. If you want you can freeze the sauce.
